Winemaking

Through the use of healthy grapes, a highly precise winemaking technique and an ageing process taking place on barrels and foudres supplied by top-quality cooperage manufacturers, we make transcendent wines which seek to frankly reflect Maldonado’s sea terroir.

Our limited editions allow us to make reds and whites in which our making purpose can be strongly perceived. Signature wines that express a detailed and respectful interpretation of our terroir, with Michelini i Mufatto’s unmistakable stamp.

Purity, elegance, and finesse are the three words that best describe our wines.

Winemaking techniques

Assisted winemaking processes Our wines are well-defined interpretations of what we wish to do; they reflect the maker’s purpose and Michelini i Mufatto’s stamp.

UNew wood usage: Our wines are aged in new oak barrels selected from the best French cooperage manufacturers. In particular, reds are aged for relatively long periods in 228 and 500-litre Burgundy barrels or 2000-litre foudres.

Vinification using the stem: Our philosophy entails making our wines using the stem in the fermentation processes in different percentages according to the wine, providing them with texture and natural freshness.

Sustainability:All practices conducted at the estate and the wine cellar are organic and sustainable.

Natural fermentations: We use native yeasts during the fermentation process of our wines to avoid altering the essence of grapes, for the purposes of paying the utmost respect to the terroir’s identity.

Our Essence

  • We make wines that are the clear proof of Maldonado’s sea terroir.
  • Our aim is to make non-exuberant wines which are more austere and delicate rather than expressive.
  • These are symmetrical whites and reds, with all of their components in the correct place.
  • Our wines are clean from the ageing process, which takes place in barrels and foudres from cooperage manufacturers specially selected by us.
